My Favorite Peanut dressing
I like this dressing on salads, but it can be used for fresh spring rolls as well. I have searched for a long time to find a dressing that has the right "Yum" factor and I think this one has it.

1/4 cup peanut butter

2 Tablespoons unseasoned rice vinegar

2 tablespoons fresh lime juice from limes.

3 tablespoons vegetable oil

1 tablespoon soy sauce

2 tablespoons honey

1-1/2 tablespoons sugar or Xylitol (optional)

2 garlic cloves peeled

1 -inch square piece fresh ginger peeled and roughly chopped.

1 teaspoon salt

1/4 teaspoon crushed red pepper flakes

2 tablespoons fresh cilantro
Preparation:
Place all ingredients except crushed peanuts and cilantro in a powerful blender and blend, scraping down the sides with a silicone spatula and reblending until all ingredients are creamy.
Use a silicone spatula to remove the dressing from the blender to a small serving bowl (you'll want to get every last bit) add crushed peanuts and chopped cilantro leaves on top and serve.
