
Quickie veggie Stir Fry with Hedgehog Mushrooms

1 cup Hedgehog mushrooms sliced thinly

1 1/2 cups thinly sliced green cabbage

1/4 cup thin sliced red Bell Pepper
-
4 cloves garlic minced
-
1 inch piece ginger sliced thinly and then sliced into matchsticks

4 Tbsp good quality peanut oil for frying
-
1/3 cup cilantro leaves, chopped for garnish

1/8 cup hoisin sauce
-
1 package mung bean vermicelli type noodles
-
2 Tbsp light Soy Sauce
-
1 Stalk celery sliced thinly at an angle to yield thin strips to match the cabbage

Sprinkle of Xylitol
Directions

Soak noodles in luke warm water prior and start preparing vegetables an mushrooms.

Dry saute Hedgehogs until they have lost some of thier water (about 3-4 minutes) and remove from pan.

Add 2 tbsp peanut oil and fry shrimp until slightly browned on both sides and remove from pan and keep with cooked hedgehogs.

Add 1 1/2 tbsp peanut oil Saute garlic and ginger and push cooked mixture to one side of pan.

Add cabbage, celery, bellpepper and cook until slightly wilted.

Add shrimp and hedgehogs back to the pan and combine.

Add soaked nootles (after wringing out some of the excess water) and stir all to combine adding some of the light soy sauce as it all cooks.

Add the Hoisin sauce and sprinkle with xylitol and stir to combine. Garnish with Cilantro and serve.
